- 2 tablespoons roasted garlic hummus or plain hummus
- 2 slices whole grain bread
- 1/8 teaspoon pepper
- 1 lettuce leaf
- 3 ounces thinly sliced, roasted turkey breast
- 1/4 cup thinly sliced cucumber
- 1/4 cup thinly sliced red bell pepper strips
- Spread hummus on one side of each bread slice.
- Lightly sprinkle with pepper.
- Place lettuce leaf, turkey breast, cucumber and pepper on top of one slice.
- Top with remaining bread, hummus side down.
- Cut in half, serve and enjoy!
